Here are my stand by lunches:
- Hotdogs (nitrate free of course, because I am crazy)
- Cheese quesadilla
- Quesadilla stuffed with leftovers
- Grilled Cheese
- tortellinni with pesto
- tortilla pizzas
and then I add black beans, fruit, applesauce, or cottage cheese to make it a little better
But I saw these itty bitty pita pockets at HEB last week, and realized, I can shove pretty much anything in them.
The boys LOVE them, and by love I mean, eat the whole thing and ask for more!
So, we have had hummus with turkey and cheese melts, chicken and pesto melts, pizza pockets, etc.
Then it hit me, I am pretty sure I am the last person to think of this..... And I bet everyone else has fun 'go to' lunch ideas. So, let me hear them!
You don't need any help from us about food - your kids eat great! Just keep doing what you are doing!

DeleteBoys like the Madras lentil soup (easy to just heat up and put fruit on the side). Yogurt, granola, and fruit mix. Pasta, parm, and peas mix. Scrambled eggs (sneak some grated veggies in), cheese, and avocado tortilla roll ups. Peanut butter spread on the flat pretzels and apples. Then the standard bento type feast with pieces of turkey or roasted chicken (Evan and Park are on a prosciutto kick), cheese, tomatoes, carrots, edamame, hummus, dried fruit, real fruit. Cupcake tin crustless quiche is a big hit (can make any combo of meat, veggie, cheeses) and can be frozen and reheated. They love a healthy version of Pumpkin Chia seed muffie tops...so I am going to make banana zucchini next. They work for breakfast or lunch plus standard sides. Then our weekly visit to Chipotle!!! It does get old. And I like lunch to be quick prep and clean up and not an 1.5 hour ordeal. There is enough to clean up as is...
