I think it may have to do with the fact that I have only cooked 2 nights a week for the past 2 years. Now that Brandon is done with school, and walking in the door at 5:30, I feel the need to eat as a family every single night. So my 'classic' dishes are going to be way overused now.... I have to branch out.
Last nights meal was from my head. It isn't even worth describing.
(But if you are curious, it was an Abs Diet Burger turned meatloaf, but had too much spinach in it and turned slightly green.) Luckily for me, I have a husband who eats whatever I make. I think he hopes to never see last nights meal again.
Tonight I made something that we have somewhat often.
Tortellini Soup
I know, I know. It is a billion degrees outside and I am probably the only person in Texas who served soup to her family tonight. But the way I look at it; we have: kinda hot, hot, and unbearably hot for our seasons.... So soup can be served year round.
Both boys asked for more, granted it was chicken tortellini, and they left the spinach and tomatoes in their bowl. But hey, I made one dish.
Unrelated to my Food Blogging:
- Hudson is going to be the next Carl Lewis. He is the fastest not even two year old I know. He will win gold in the 100 m some day. He is seriously fast from the start. (AND Carl Lewis went to UofH.... its a sign.)
- Luke has been calling for his 'bubba' to come sleep in his bed every night. They look so squished in there. I am contemplating just moving them into a full size bed so they can sleep together. Right now I have their beds squished up against one another. Hopefully tonight will be okay and not a big party.
- I am also married to THE World Champion Bocce Ball King of Napa, CA 2011. It was a proud moment.
- And, I want my husband to build one of these in our back yard. Or maybe we should move our backyard to Napa.
