Breakfast Dishes

I have never had so many people sleep in our house, ever. I was worried about what I would feed them, so I went through my recipe boxes that I got at one of our wedding showers and found some great breakfast ideas!

This is what I made before going to bed Christmas Eve, and then I just threw it in the oven Christmas morning!

Bertie's Breakfast Casserole

6 Slices Bread (I used white sourdough from the bakery)
1package grated cheese
1lb breakfast sausage (cooked and crumbled)
9 eggs
1tsp dry mustard
seasoned salt
1 1/2 Cups milk
1 1/2 Cups sour cream (I only used 1/2 cup because I read it wrong!)

Grease 9x13 pan. Put 6 slices bread on the bottom. (I cut mine into cubes)
Next, sprinkle generously both sausage and grated cheese.  Mix eggs, dry mustard, season salt, milk, and sour cream. Pour over other ingredients,  Top with more cheese. May refrigerate overnight.
Bake at 300 for 1 hour.
*I think I would keep the sour cream at 1/2 C next time too... it was hard to mix it into the milk mixture.

Keri's Breakfast Bundt Cake

2 cans Flaky Biscuits
5 eggs- beat lightly
1lb breakfast sausage, crumbled, cooked, and drained
1 pkg. grated cheddar cheese

Grease bundt pan with cooking spray and preheat oven to 350.
Use first can of biscuits for the bottom of the pan. Flatten and stretch each biscut and line the bottom of the pan, overlapping slightly.  Sprinkle cooked sausage on the top, then beaten eggs, and then cheese. Top with the other can of biscuits, flattened and stretched, overlapping slightly.

Cook for 30-35 minutes. Let cool 10 minutes in the pan, then transfer to the serving plate.


Fun side note... 
Bertie is a friend of my mothers. She has known me since before I was even born. She hosted a wedding shower for us, and she is a grandma to twins too! 


And Keri is one of my oldest friends. I met her when I was 8 and we soon became best friends. Our moms live a couple streets over from one another. Keri and her family recently moved back to Sugar Land! I just love her. We pick up where we left off every time we talk. It is so nice to have a friend like that.
