I get on a meal planning wagon and then I stop. Brandon starts working late, and I could care less what I eat for dinner. And before you know it, weeks on end the boys are eating random meals for dinner.
So, I am back at it. For a bit. Trying to make dinner and eat it even if Brandon is home or not.
AND... I don't want to sound braggy or boastful, but my kids have always been great eaters. They would eat whatever we ate. They would eat great breakfast meals, lunches were exciting too. Since moving in the last 6 months, I think I just got caught up in the stress and quit cooking as much.
They are they WORST eaters now. The worst.
We had to bribe them with candy last night to get them to eat all their meatloaf. Kinda negates the whole healthy eating habits I was going for. Although, they were dipping their sweet potato fries and meatloaf in cottage cheese... so they do still eat some good stuff!
Which, by the way. Was great. You totally need to change up your meatloaf.
I divided the meat in half and froze one loaf, and baked one. Way to big for this family of 4.

I cracked open my texas tables cookbook and made the parmesan crusted turkey cutlets- really yummy! Also making the lettuce wraps and then lasagna roll ups!
